Abstract	:	Measurement of the electric properties of materials (electrical permittivity and con-ductivity) can be correlated to important physical properties of many materials that mayhave large economic implications. Materials with high water, salt, or ionic content havehigher permittivity and conductivity. Dry materials or those with high fat content typicaUy have lower conductivitty and permittivity. This correlation between the electricalproperties of materials and some of their physical properties is often used for measurementof moisture content in soil, grain, and wood to aid in modern agricultural and manufac-turing techniques; measurement of fat content in meat and dairy products to aid in foodrating and processing applications; measurement of properties of human tissue to aid inmedical researcb; assesment of ripeness and quality of produce; and a host of other appli-cations.
